Turn Montreal's now abandoned, 100 year-old, 58 hectare, sun-drenched, windswept plateau - the Hippodrome (former horse race course and gambling operation) - into a combination practical "Université Verte," local natural/organic food growing operation, permaculture edible-park, CSA terminus and artisanal guild-occupied centre.

A PLACE WHERE the human and financial resources of the entire community could be put at the disposal of ALL OF THE SUBMISSIONS IN THIS 'HORSERACE,' and where everyone concerned for the good of the community, and the welfare of the planet, could work together, cooperatively, upon the research, development, implementation and achievement of all of their excellent ideas, noble goals and visionary aspirations.

A capital un-intensive project and ready-made facilty.

Meanwhile, something you can sink your teeth into: a recipe

Self-sealing "CREAMTOP" Yogurt

QUICK SUMMARY

Ingredients:

1. 4 tablespoons Active Bacterial Culture (live yogurt)
2. 4 litres Pasteurized, non-homogenized milk (3.8% MF)

Materials, Utensils & Methods:

Gas range and gas oven
8 (+) litre pot
Long-handled, large metal spoon
Pyrex measuring cup
Measuring spoons
Cooking thermometer
Serving Containers
Whisk
Tongs

Simplified Preparation: (Temperature = Fahrenheit)

- Put four tablespoons of yogurt into Pyrex measuring cup
- Pour 4 litres of milk into a large metal pot.
- Over a low flame, stirring regularly, gently raise the temperature of the milk to 180 (F)
- Remove from heat & reduce milk temperature to within 115 - 110F, stirring constantly
- Mix some of the warm (110 - 115F) milk with yogurt in the Pyrex cup, blend thoroughly
- Pour blended yogurt/milk mixture back into large pot of warm milk, mix thoroughly
- Pour entire solution into serving containers
- * Put containers into warm (103-110F) oven for 8 - 12 hours (more or less)
- Refrigerate containers once desired flavour and consistency is reached
- Leave refrigerated for at least 24-36 hours.

* NOTE: The pilot flame over the lower grill of a gas oven is enough to keep the closed oven at about 103F

DROP IN (to reality)

SMASH YOUR IDOLS: UNPLUG & DISCONNECT
TRUST NATURE. (to show you what you are really made of and who you really are)
NEXT: TRUST YOURSELF (your intuition)

Go acoustic, get face to face: Word gets around - even to the ends of the earth.

Then take a good look, deep into the well, follow the stream back to the river, and the river to the Source, to find out where you draw your water from.
